Fibroid Healing Recipe: Black Bean, Zucchini, and Pepper Ragout with Spelt Pasta

A great weekend for me usually involves cooking, alot of quiet time or recharging in nature, and laughing with a handsome man 😉 -or dear friends. To be completely honest however, it doesnt always happen like this. Sometimes, I am known to upset the apple cart and meet my girlfriends out for dancing in my favorite pair of heels.. (lately these nights are few and far between) or I may even work through the weekend depending on how my week plays out with private coaching clients and scheduling with my other obligations.

This weekend however, unfolded perfectly.

I was able to get alot done for my coaching clients as well as find time to fit in some serious self-care.. It was just the right balance of light and dark. Quiet and Clamor. Down time and workout time. And of course.. the season finale of Game of Thrones. I don’t know if I should be hap#operationfibroidfreedompy or sad…? 😉

The best part about it was that I was able to experiment and create a recipe based solely on what contents I found in my kitchen on the spot. I’m quite proud of the finished dish as it was more delicious than I expected. See, I’m a vegetable lover -but if there is one veggie I could do without it would be zucchini. It just so happened that we had a ton of zucchini in the fridge that needed to be eaten, so I decided to come up with something. I’m glad I did because this recipe was poppin’ !!

Black Bean, Zucchini and Pepper Ragout with Spelt Pasta:


  • 1 Can Organic Black Beans (drained and rinsed)
  • 1 Zucchini (cut in half and sliced)
  • 1 1/2 Bell Peppers (mix of green and yellow are pictured)
  • 3/4 of Can of Organic Crushed Tomatoes
  • Handful of Cilantro (chopped)
  • 5 cloves of garlic (chopped)
  • 2 Cups uncooked Spelt Rotini Pasta (Organic)
  • 2 tbsp Olive Oil or Coconut Oil
  • Sprinkle of Himalayan Pink Sea Salt
  • Garlic Powder (season to taste)
  • Sprinkle Black Pepper
  • Sprinkle Paprika
  • Sprinkle Red Pepper Flakes

For the Ragout

Add Oil of choice, Zucchini, Peppers to Pan and Sautee for 8-10 min or until they start to carmelize slightly

Add in garlic and sautee until it begins to carmelize

Add black beans and seasonings stirring to evenly distribute

Once beans are heated through add in crushed tomatoes and simmer for 5-7 min

Add cilantro to the top and serve allowing the cilantro to naturally wilt from steam

For the Pasta:

Bring 4 cups water to boil

Add in pasta and cook for 10 minutes or until pasta is al dente

Remove pasta from boiling water and rinse with lukewarm water. (set aside)

Once ragout is complete, serve on top of a bed of the pasta
